Tray Prep & QR Tagging

Patient meal trays containing known nutritional content are automatically tagged during meal assembly with unique QR codes that are linked to the patient records.

Passive Image Capture
Overhead cameras automatically scan prepared trays at the food assembly area and returned trays at the breakdown area, requiring no manual engagement by kitchen staff.
AI Analysis & Insights
AI calculates nutritional consumption and food waste by patient from the scanned images. Patient preferences, facility-level data and other valuable insights are highlighted via dashboards with optional EHR integration.

TrayIQ began as saase, an AI-powered virtual waitstaff created to support restaurants under pressure. Our goal was to restore the human experience that so much emerging technology was stripping away. We built a solution that helped restaurants stay operational while still delivering warmth, care, and connection to their guests.

As we listened more broadly across the foodservice world, a deeper need emerged in healthcare. Conversations with hospital staff, dietitians, and patients revealed a critical blind spot: hospitals don't know what patients actually eat or leave behind. This leads to missed opportunities to nourish, increase food waste, and lower patient satisfaction. We saw that food could be more than a service touchpoint. It can be a tool for healing.

So we pivoted. Today, TrayIQ delivers real-time nutrition intelligence that helps hospitals treat food as medicine. Our platform turns trays into data, uneaten bites into insight, and meals into moments that support recovery, reduce waste, and improve care.

Chief Executive Officer

Expertise: Startup & growth leadership, SaaS strategies, enterprise sales, multiple exits (IPO), translating tech into high-impact systems.

Ari Kaufman is a veteran entrepreneur and executive with a long track record of building technology-enabled service businesses across healthcare, civic systems, education, and workforce innovation. He has founded, acquired, and led multiple companies from launch through exit — including a successful IPO. Ari's known for envisioning platforms that simplify complex institutional processes through smart, scalable solutions.

As CEO of TrayIQ, Ari leads the company’s business operations, institutional partnerships, and go-to-market execution. He brings deep expertise in scaling early-stage ventures and building mission-aligned collaborations that accelerate growth and adoption in healthcare and foodservice environments. His leadership ensures TrayIQ’s innovation is grounded in operational reality and designed for scalable impact.

Ari previously founded Spout, a civic tech platform backed by public and private partnerships to improve access to health and social services through modern digital tools.

Liz Moskow

Chief Strategy Officer

Expertise: Food-as-medicine, culinary innovation, foodservice systems, trend forecasting, brand strategy, product and menu development.

Liz Moskow is a Culinary Institute of America-trained chef, strategic food futurist, and innovation leader with over 20 years of experience in culinary development, foodservice strategy, product, brand and program development focused on contributing to a more sustainable food system.  She’s advised leading food companies, shaped national food trends, and developed performance-based menus for wellness and care environments.

As a co-founder of saase, Liz helped design and validate intelligent foodservice solutions that blend operational simplicity with AI efficiency. When the team pivoted toward healthcare, she recognized the deep gap in how hospitals measure or fail to measure, nutrition intake and patient food preferences.

With TrayIQ, Liz is helping hospitals leverage real-time consumption data to improve healing, reduce food waste, and inform better menu decisions. A long-time mentor for Techstars’ Farm to Fork and Future of Food programs, she brings a rare blend of culinary credibility, systems thinking, and health-centered vision.

Expertise: Computer vision, machine learning infrastructure, edge computing, AI in food and health systems, technical team leadership.

Kevin O’Shea is a machine learning engineer and AI systems leader with deep experience building scalable products that transform operational noise into clear, actionable data. With multiple startup exits to his name, Kevin specializes in computer vision, edge AI, and engineering teams that move fast and build resilient platforms.

At saase, he developed the core imaging and decision logic for an AI-assisted hospitality platform. That same foundation now powers TrayIQ’s passive tray-scanning system that turns meal assembly and disposal footage into structured insight for hospital teams.

At TrayIQ, Kevin leads the technical vision: creating low-lift, high-impact tools that bring hospitals new visibility into patient nutrition, waste patterns, and satisfaction drivers, all without requiring new workflows or staff effort.
